Protein-rich by-products from conventional plant protein extraction processes, particularly those rich in albumin, are often underutilized. Dr. Petra Först, a professor of food process engineering at the Technical University of Munich, Germany, will use an optimized processing route to recover underutilized albumin side streams for use in alternative protein food production.
