Brief summary
The aim of the project is to comprehensively utilise mung beans and lentils and to produce protein concentrates with minimal amounts of potentially antinutritive ingredients (ANF). This is to be achieved through gentle processing - e.g. through extractive or fermentative removal or reduction of ANF - and the simultaneous utilisation of side streams. With the involvement of several research partners (TU Munich, Fraunhofer Institute, University of Bonn) and various stakeholder groups, methods are being developed to establish sustainable processes and obtain products with good technofunctional, sensory and physico-chemical properties. The results will be made publicly available, including via specialist journals, conferences and existing networks, in order to increase awareness and acceptance of legumes. At the same time, they are directly integrated into teaching and offer opportunities for young scientists to gain practical experience.
