In our latest publication on mycotoxin research, Biehl et al. take a closer look at the malting process. Using a multi-mycotoxin LC-MS/MS method, 14 Fusarium toxins, including modified ones, were analyzed in barley before and during malting. In a micro-malting setup, barley malt inoculated with F. culmorum was produced under reproducible conditions and the mycotoxin content during the malting process was compared with the fungal DNA content. An analysis of different malting scenarios showed how the toxin profile is influenced by the process parameters (e.g. temperature). All details can be found here.
